These honey roasted carrots are sweet, tender, and the perfect side to any fall or winter meal. Their deep, orange color contrasts beautifully with any adjacent, green side dish. Moreover, they wonderfully compliment a roasted chicken or seared salmon entrée. You can add as much or as little sweetness as you prefer. In fact, you can omit the honey and/or maple syrup altogether to prepare simple, roasted carrots.

  • 2 small bunches of carrots (12-15 carrots)
  • 1 tablespoon butter, or oil
  • 1 tablespoon honey
  • 1/2 teaspoon pepper
  • 1 teaspoon kosher or sea salt
  • 1 tablespoon maple syrup


Preheat oven to 375 degrees.

Julienne peeled carrots, ideally with a mandoline, to form evenly sized strips.

Arrange carrots on a sheet pan in a single layer to ensure even roasting.

Add butter, honey, salt, and pepper to sheet pan.

Place in oven for approximately 30 minutes, tossing every 10 minutes.

Drizzle with maple syrup and toss together!
