Haricots Verts with Cranberries & Almonds Recipe

Green beans are one of my favorite vegetables to cook year-round. They are wholesome, crisp, and can be prepared in a variety of ways. The results are always simple and delicious. Relative to American green beans, I often find myself selecting the French variety, haricots verts. Their longer, thinner pods make some classic recipes, such as bacon-wrapped green beans, easier to prepare. When cooked just right, French green beans are perfectly tender and rich in flavor.

French green beans appear as a constant in my family's meal rotation, as well as our holiday menu. I wrote this recipe through trial and error with only a few ingredients. For me, cooking from scratch involves gathering fresh ingredients, tossing them in a pan, and adding flavor until I get it just right. Feel free to tweak this recipe to your liking!

Haricots Verts with Cranberries & Toasted Almonds

Ingredients

16 oz. French green beans, fresh or frozen

1/4 cup slivered almonds, toasted (recipe below!)

1/3-1/2 cup dried cranberries or craisins

2 tbsp. unsalted butter

Sea salt and pepper


Instructions

Add some water to a Dutch oven, or pot, and boil green beans until tender. Drain and set aside.


In the same Dutch oven, or a separate sauté pan, heat butter over medium-low heat until melted. 


Add in the cranberries. Sauté for three to five minutes until the cranberries soften and absorb the butter.


Add in the French green beans. Season with salt and pepper. Sauté for another three to five minutes until soft.


Top with toasted almonds.

Toasted Almonds

Preheat oven to 350 degrees.

Arrange slivered almonds in a single layer on a baking sheet.

Toast for about five minutes until the almonds are golden and fragrant. Keep a close eye on them as they can quickly burn!
